A twenty-year partnership

A couple in life and in the kitchen, with a career built alongside the most accomplished professionals in Spain and France.

From Santceloni to a house of their own

For more than twenty years, Óscar Velasco and Montse Abellà have been one of the most solid partnerships in Spanish cooking.

They met working side by side on the most demanding projects in Spain and France, and have shared a kitchen and a life for two decades.

For more than twenty years they led the culinary offering at Santceloni, where they defended two Michelin stars in a restaurant that was not their own. In 2023 they took the step of opening their own house in Madrid: for the first time, their cooking — personal, creative and true to seasonal produce — is shown without the constraints of someone else's restaurant.

Two decades together

Cooking that no longer answers to anyone

“I lost my job and within two years I've set up a Michelin-starred restaurant,” says Óscar Velasco of the house's first years. It is at VelascoAbellà that, for the first time, their cooking is shown 100% as they understand it: personal, creative and always putting the produce first.
